Shepherd's pie of 100% plant protein

My kid are finicky, they love my food they just ask that I don't tell them what changes I've made to the dishes they grew up on, so I agreed with them. The day I made the Shepard's pie I didn't tell them that it was made of plant protein until 2 days later after the seasoning sank into the pie and they by for second, their reactions were priceless. My son couldn't adjust but he did like it but ask that I stick to the original recipe, my daughters said they would eat it again but prefer the original recipe, but I say, "let the changes continue"... 
 

 
and this is what I used...
 
- 2 medium turnips
- 2 medium parsnips
- 3 whole garlic cloves (add to the water of the parsnip/turnips) 
***MASHED TOPPING (potato alternative)
cook the turnips and parsnips like you would mashed potatoes
use lowfat sour cream, sea salt, a little mayo to make creamy
- 1/2 head of green cabbage sliced
- 2 jalapenos sliced
- 1/2 white onion sliced
- 1 pk Lipton onion soup mix
- garlic powder to season to taste
- 1 pk. brown gravy mix
- 1 pk. frozen mixed vegetables (8-10 oz)
- 1 pk. Beyond Beef meat package
- 1 pk. 8oz (any kind) cheese blend that include cheddar cheese
- 4oz Mozzarella shredded cheese
- 8 slices is bacon
- Panko
- 1/4 cup roughly chopped flat parsley
- 1/2 shredded cheese
- dried basil
- 1 can green beans rinsed off, cooked in microwave with butter 
Preheat oven at 350 - 375
To start I cooked the meat product in 1/2 pack Lipton onion soup mix, 3/4 package of Brown gravy mix and started with 3/4 cup of water and adjusted the amount as the meat mixture cooked and thickened, cook until a consistency of a really thick chili, season with garlic powder to taste...set aside 
Then, in a large skillet I cooked 8 pieces of bacon then remove and rest on paper towel, pour 1/2 of the bacon dripping in heat proof container add 1/2 head of sliced green cabbage to skillet along with 1/2 medium white onion sliced plus 1 sliced medium jalapeno pepper, cook this until the cabbage is dente NOT LIMP, sprinkle with basil. Once done pour into 13x9 metal pan NOT GLASS for this casserole
 
  Now, pour the meat mixture over the cabbage mixture, place a thin coat of cheese over this layer
 Next, pour the bag of frozen mixed veggies and the cooked green beans over the meat and cheese layer
 
Now, spread the mashed parsnip/turnip mixture on top of the veggie layer and top with the rest of the cheddar cheese blend, and mozzarella cheese add more if you like. Wrap in foil and bake for 30-45 minutes at 375 preheated oven

Now, in a bowl start with 1 cup of Panko, 5 pieces of bacon crumbled, and roughly chopped parsley, 1/4 cup shredded cheese  
 
After 30-45 minutes of baking remove foil top with the Panko mixture and cook until brown crusted until desired approx.20 -30 minutes
