Turkey and veggie meatloaf

The veggies are grinded up and mixed in with the meat


First blend the oats in a food processor until you get a fine texture set aside, then blend all the veggies (carrot, celery, bellpepper, garlic), in a food processor until smooth set aside...
In a large bowl add one pound ground turkey, 1/2 pound ground turkey sausage, 1 egg, the veggie mixture, the oat mixture, 2 good squirts of sweet Baby Ray's BBQ sauce and mix with you hand...its a dirty job but somebody gotta do it... then set aside.
Next... sauté 1 bag of baby spinach in 1/2 tsp + of coconut oil until done about 5-6 mins.
now...on a clean flat work surface lay out a strip of plastic wrap and flatten out your turkey meat mixture in a rectangular-ish shape...
Then...add the sauté spiach and 1/2 cup of Cheddar cheese spreading evenly on top of turkey meat...

Now....(here's the fun part) take the end of the plastic wrap nearest you and roll the turkey meat into a log folding the end caps in to hold in the filling...once you reach the end make sure the seam is on top facing you....
Now place a loaf pan (make sure there's no plastic on the turkey log) on top of the log then flip it over now the seam should be at the bottom of the 
Drizzle with more Baby Rays BBQ sauce place in a preheated over at 375 and cook for 60 minutes...
After 60 minute drizzle with more BBQ sauce turn over to broiler and cook for and additional 30-45minutes or until desired color
Allow to cool on rack in pan....
slice and ENJOY!!!

Chocolate protein pancakes

Absolutely delicious..... period that's all!!!
I think I'm on some kind of pancake mission. This morning at 4:45a.m I woke up wanting some pancakes not something or any old thing sweet, but some pancakes. I also had to consider I was trying to lose a few pounds so I needed these cakes to be tasty, satisfying, waist watching, and chocolaty delicious. So, I turn on my computer and went chocolate pancake hunting and came across a recipe that's simple quick and chalk full of protein. I had to make some adjustments to what I had on hand in my kitchen at 5a.m.
  

 
HERE'S WHAT I HAD TO USE
2 large strawberries, sliced and drizzled with honey
2 TBSP pure maple syrup
2 eggs
1 ripe banana mashed
1 cinnamon stick (I used my zest grater to get a fine ground of cinnamon) 1 tsp.
*****or just use ground cinnamon...I was out so?
1 TBSP #Hershey unsweetened cocoa powder
1/4 cup old fashion rolled oats
1/8 tsp. baking soda
pinch of salt
2 TBSP Muscle Milk brand 100 calories chocolate whey protein powder 
coconut oil for frying
 
 

DIRECTION
1) slice the strawberries and drizzle with honey then set aside
2) add the oat into a food processor and pulse into a powder form but I left a few chunks
3) add to the processor the cinnamon, salt, baking soda, cocoa powder, and whey protein and pulse ingredients together
4) mash the banana with a fork mashing out all or most of the lumps, now add the eggs to the banana and mix well
5) add the dry ingredients to the banana mixture and mix well.....meanwhile
6) heat a large skillet or griddle on medium low add coconut oil
7) ****this batter made 3 using a 1/4 cup to measure. You can make this as small as you want or as big as you wan...t TIP* just know that these cake are delicate and not so easy to flip, so flip them when you notice the bubbling
8) when complete top with the strawberries and drizzle with the maple syrup

Think 'tropical' Oatmeal for breakfast

Oatmeal is known for helping you stay full, well this oatmeal is so full of coconut & banana natural flavor I was really happy with the taste, I think you will be also..... ENJOY!!!
The coconut milk I used (Thai Kitchen unsweetened) is thick and rich I love it #ThaiKitchen. I also used the So Delicious brand coconut milk that has 45 calories per cup but only used 1/2 cup in this dish. The taste is #awesome no need for butter.
 
I USED to make 2 servings
 
1/4 cup So Delicious (unsweetened and 45 calories per cup) coconut milk
1 cup Sunny Select Old Fashion Oats
1 cup water
1/3 cup (5TBSP) Thai Kitchen (unsweetened) coconut milk
1 med size banana mashed
1/2 TBSP cinnamon, 2 tsp light brown sugar, (I eyeballed the following) ground ginger, nutmeg, cumin



 
WHAT TO DO NEXT:
 
1) over medium heat bring all milks, brown sugar and water to a boil
2) add oats and reduce heat to low (be patient), cook until fluids are dissolved, stirring frequently
3) remove from heat, add the spices and stir mixing completely
4) add the mashed banana and mix in well (at this point season according to taste), let cool then serve with fruit

Breakfast to go...blueberry oatmeal cup

This was very delicious and filling, it has fresh blueberries in the oatmeal, almond milk soaked chia seeds, cinnamon, nutmeg, all topped with a dollop of vanilla pudding and cruched cashews almonds and sunflower seeds
1/4 cup unsweetened vanilla almond milk
1/4 cup water (more if needed for desired thickness of oatmeal
1/4 cup old fashioned oats
1/8 tsp. cinnamon, nutmeg to taste
1/4 cup of soaked chia seeds (I soaked them in almond milk overnight)
1 TBSP of vanilla pudding (made from the box)
1/2 cup fresh blueberries
1/2 medium ripped banana sliced
1 TBSP of a blend of nuts (I keep on hand a crushed blend of cashews, almonds, pumpkin seeds, and sunflower seeds, I put it on most of my shakes and breakfast cereal)
  
1) I cooked the oatmeal according to directions and my taste in the almond milk and water, added the cinnamon and nutmeg allowed to cook, added the blueberries during the last 4-5 minutes 
2) layered the cup
-bottom: chia pudding, sliced bananas
-middle: blueberry oatmeal
-top: chia pudding, formed a circle of banana slices, placed the dollop of vanilla pudding
sprinkle with nuts

Sunday morning oatmeal & strawberries

This oatmeal is loaded with goodness.
1 cup of Almond milk, 1/2 peeled fugi apple, pinch of cinnamon, pinch of nutmeg, 1/2 cottage cheese, 1 TBSP brown sugar, honey drizzle. To add to the beauty of this day I had strawberries with mint, cinnamon, pumpkin seeds, and almond slices, and topped off with the tarty sweet blend of carrots, yellow sweet peppers, lemon and pineapple. ..ENJOY!!!
