Huevos Rancheros
I like spicy foods but not too spicy and Huevos Rancheros delivers just that. Like with any recipe ingredients are meant to be adjusted especially spices: chili. peppers, jalapeƱos, pepper flakes just to name a few that'll take your dish to a whole different flavor arena.
Huevos Rancheros is a quick and simple dish to make if you have a good base sauce to start with, here's the one I made this morning
~ 2 cups of red enchilada sauce
~ 1 15oz can refried beans *I mashed them down further with a potato masher for a smoother sauce
~1/4 of pork chorizo (I normally buy the type in a skinny log and divide it into 4 then freeze it for use as extra flavor)
~ mini corn tortillas (5 - 6 per serving )
~ eggs (1 - 2 per serving)
~ 1TBSP garlic powder
~ 1TBSP onion powder
~1 1/2 tsp. chili powder (adjust accordingly)
~ shredded mozzarella cheese
~ shredded mild chedder cheese
~ fresh snipped cilantro
~ green onions thinly sliced diagonally
~pepper flakes *optional
~ dried basil *optinal
~ coconut oil for frying
-OR-
~ 1TBSP butter for frying
To start... In a medium sauce pan over medium heat combine the red sauce, refried beans, pork chorizo, garlic powder, onion powder, and chili allow to cook for 10 min then lower heat to simmer 10 mins. turn off heat
Now...
in a medium to large non-stick skillet, melt some coconut oil or butter (dont let butter brown or burn, just melt it)
*I used coconut oil because I LOVE the flavor, my daughter wanted hers cooked in butter
Now place tortillas in skillet, allow to absorb oils then flip and allow to absorb oils...
Using a ladle or large spoon, spoon Ranchero sauce over tortillas, there's really no need to spread it, it'll spread as it heats up
Sprinkle a handful of mozzarella cheese around the sauce almost to keep it from spreading too much,
Now crack egg over the sauce, sprinkle with cilantro, pepper flakes, basil
turn heat to medium low, over with a top so the steam can cook the eggs...
***depending on how you want your eggs allow to cook covered 5 -7mins
Meanwhile...
prepare the serving plate with a ladle of Ranchero sauce surrounded by a handful of cheddar cheese
When the eggs are done slice them over the prepared plate, top the eggs with green onions and serve

Sunday morning oven pancake
This is an awesome brunch dish or lunch dish that's meant to serve 4 but, I tell you it's so filling I cut the other quarters in half. I really had fun making this pancake.
No more dilly dallying lets get to it but, before I do its only right to give credit where its due, this recipe is my tweaked version of Land O'Lakes 'Sundown oven pancake'...
now let's begin...
The SHELL ingredients:
~ 1 TBSP butter
~1/2 cup flour (all purpose)
~1/2 cup half &_ half
~ 2 eggs, lightly beaten
~ 1/4 tsp. salt
~ a dash of garlic powder
The TOPPING ingredients:
~ 1TBSP coconut oil (more if needed)
~ 2 cups broccoli florets
~ 1cup red onion, cut @ 1" pcs
~ 1 medium red bellpepper cut @ 1" pcs
~ 1 medium green bellpepper cut @ 1" pcs
~ 1medium Roma tomato cut @ 1" pcs
~ 1/2 tsp. salt
~ 1/2 fresh cracked black pepper
~ garlic powder *to taste
~ 1 1/4 cup pizza blend cheese
~ 1/4 cup mild cheese **a sharp cheese was suggested by my friends
∆∆∆
• heat Oven at 425°, In a 9" pie pan melt the 1 tablespoon of butter in the oven give or take 2 to 3 minutes remove from oven.
•In a medium bow stir together the flour, milk, eggs, 1/4 tsp. salt, and garlic powder
• pour this mixture into the pan of melted butter and bake for 12 - 15 minutes or until golden brown remove from oven set aside
Meanwhile...
• In a medium skillet melt your coconut oil over medium heat add the bellpepper, red onions, broccoli florets, salt, and garlic powder *to taste and cook for 12 to 15 minutes stirring frequently ***Do not add your tomatoes at this point add them in the last 5 minutes of your cooking time...
Now...
• take the shell and spread 3/4 of the pizza cheese and 1/2 of the cheddar cheese on the bottom on the shell
...• top the cheese with the cooked veggies
• then top the veggies with the remaining cheese (add more if needed)
Then...
• return to oven and bake for an additional 5 - 7 minutes or until your desired color, remove from oven let rest *** pie will deflat a bit
• cut into 4 pieces ** I suggest 8 slices and

Turkey sausage, tatar tot & cheese bake
Breakfast is what breakfast does....'breakfast' to break your fast which occur while you were sleeping. This easy quick breakfast will do just that filled with good carbs and protein.,. ENJOY!!!
This is tasty and well seasoned without extra added salts
YOU'LL NEED
8x8 greased glassed baking dish set oven at 350*
5 servings (approx. 10 tots per serving) of sweet potato tots
1/4 cup shredded Colby & Monterey jack cheese + 2 TBSP
12 oz pk JennyO ground turkey sausage patties ( I broke mines up to help with the crumbling during the cooking process)
1/4 pk of pork Chorizo
1/2 diced red pepper, 1/2 diced green pepper, 1/2 seeded and diced jalapeno pepper, 1/2 diced onion
7 eggs well whisked together
1/2 TBSP garlic powder
1/4 cup roughly chopped flat parseley
1) bake the tots approx. 12-15minutes according to the directions on the package , set aside
2) in a large (wide) skillet add approx. 1 TBSP EVOO heat over med then add all peppers and onion and cook approx. 5 minutes
3) add the Chorizo to the skillet of veggies and cook until chorizo dissolve, now add turkey patties
4) cook the mixture until turkey is partially done (approx. 5 more minutes) remove from heat
5) fill the greased 8x8 pan with the sweet potato tots, then top with 1/4 cup cheese (add as much cheese as you like just try and stay under 1/2 cup)
6) then cover that layer with the meat mixture, add the garlic powder to the eggs and whisk together now pour the whisked eggs over the meat (do this in a slow up and down motion to ensure coverage)
7) top with 2TBSP of cheese and flat parsley
8) cover and bake @ 350* for 30 minutes, remove cover and cook until the middle is stiff
9) now broil until desired color, allow to cool and divide the dish into 6 pieces...ENJOY!!!

Stuffed turkey meatloaf
This has the basic ingredients of a regular meatloaf but I used bread crumbs from a boxed stuffing and smashed them and I used Sweet Baby Ray's BBQ sauce instead of katchup

Mini Swiss cheese burgers
BISQUICK IS MY NEWEST BFF

This a one of many quick, easy and fun meals made in minutes
All you'll need are:
THE BURGER MIX BAKINGMIXTURE
1 lb. Lean ground beef 1/4 cup heavy cream
*** (can be made with ground turkey) 1/4 low fat buttermilk
1 medium onion 1/2 cup Bisquick
8 sml - med sized mushrooms sliced 2 eggs
1 TBSP Worcestershire sauce
1 tsp. garlic powder
3 slices of low-fat Swiss cheese GARNISH
-cut into 12 squares 1 steakhouse tomato diced
1 cup reduce fat shredded Cheddar cheese - seasoned with dried basil, cilantro
2 tsp. of the fat/salted portion of homemade Ghee - olive oil, garlic powder
***or 1 tsp. salt Catsup, Mustard, or BBQ sauce
***You can even season this with steak seasoning
remember it's a burger go for it!!!
- HERE'S WHAT YOU DO
- 1) Preheat the oven 375 degrees, spray a muffin pan with cooking spray***if using a large size muffin pan then spray only 6 molds and double up on portions2) In a med-lg. skillet cook and brown your mushrooms using Ghee, butter or vegetable oil ( I used Ghee), then set aside3) In the same skillet cook your meat and onions over medium-high heat 5 to 7 minutes, until thoroughly cooked; drain, stir in Worcestershire sauce, mushrooms, garlic powder, salt, and Cheddar cheese

4) In a good size bowl, stir together baking mixture ingredients with whisk until blended. Spoon 1 TBSP baking mixture into each muffin cup. Top with about 1/4 cup burger mixture (as shown above)
5) Then place a square of Swiss cheese on top of the meat mixture (as shown above)
6) Spoon 1 tablespoon baking mixture onto the Swiss cheese in each muffin cup (as shown above).
7) Bake about 30 minutes or until toothpick inserted in center comes out clean, and muffin tops are golden brown, allow to cool about 5 minutes then using a thin knife, loosen sides of muffins from pan; and place on cooling rack. Cool 10 minutes longer, and serve with garnishes
