Bacon & Cheddar cheese waffles

"IT'S IN THE MIX"!!! bacon and cheese in a waffle awesome with more bacon on top, this recipe makes 2 large waffles 

This morning I wanted something sweet & spicy to eat after my 3.88 mile run interval  (smile) and this is what happened.
This is a easy meal from basic waffle mix that requires water only, but from scratch is aways better but I wanted quick and easy 5-6 ingredient quickness.

Here's all thats needed...


~ coconut oil to grease the waffle iron
~ 3 slices of cooked bacon then crumbled
~diagonally sliced green onion for toppings
~1/4 cup shredded cheddar cheese
~1 cup pancake/waffle mix (that require only water to mix)
~1 cup water
~1 TBSP butter
~raw honey or pure maple syrup to drizzel  
•cook bacon and crumble 2 slices to add to mix save one piece for the topping, set aside 
• heat and grease waffle iron with coconut oil 

•in a medium bowl combine waffle mix, cheese, bacon, and water
• mix just to combine **do not over mix

***I added a few drops of
•butter flavor 
•coconut extract 
•vanilla extract 

***this recipe makes 2 large waffles so divide accordingly
• cook according to desired color (i like mines crispy)
•then continue with the remaining batter

•top with butter, green onions
•drizzel with raw honey or maple syrup 
•top with over easy egg

Double Decker Cheddar cheese cheeseburger


Making this burger has been on my brain for weeks now after buying a box of 100% Angus beef patties from the local Walmart at a good price of course. I really didn't want a deep flavored rub on it I wanted something different, so I used...
a coffee & garlic rub from Trader's Joe
extra garlic powder, cracked black pepper, chili peppers and garlic infused EVOO, and dash of salt on both sides, allowed them to marinate at room temperature for 30-45 minutes wrapped in plastic

While the rub and spices attacked the meats (F.Y.I...the patty at the lower end of plate is an Jenny O turkey burger), I pan toasted the freshly made hamburger buns I got from Walmart in EVOO, sliced the vine ripened tomato, sliced a red onion, and washed and dried a few leafs of iceberg lettuce. My guess requested tomato pesto on their turkey burger so...
Heat a medium skillet over medium heat, drizzle with EVOO place thawed beef patties in allow to cook roughly 2-3 minutes ( i wanted mines medium well) on the first side then flip cook additional 2 minutes check for desired doneness by using a meat thermometer or by the color of the juice flow. Remove from heat place skillet on rack let meat rest a minute or two, place cheese on top l, then begin to build your 'tower of power'...

Turkey and veggie meatloaf

The veggies are grinded up and mixed in with the meat


First blend the oats in a food processor until you get a fine texture set aside, then blend all the veggies (carrot, celery, bellpepper, garlic), in a food processor until smooth set aside...
In a large bowl add one pound ground turkey, 1/2 pound ground turkey sausage, 1 egg, the veggie mixture, the oat mixture, 2 good squirts of sweet Baby Ray's BBQ sauce and mix with you hand...its a dirty job but somebody gotta do it... then set aside.
Next... sauté 1 bag of baby spinach in 1/2 tsp + of coconut oil until done about 5-6 mins.
now...on a clean flat work surface lay out a strip of plastic wrap and flatten out your turkey meat mixture in a rectangular-ish shape...
Then...add the sauté spiach and 1/2 cup of Cheddar cheese spreading evenly on top of turkey meat...

Now....(here's the fun part) take the end of the plastic wrap nearest you and roll the turkey meat into a log folding the end caps in to hold in the filling...once you reach the end make sure the seam is on top facing you....
Now place a loaf pan (make sure there's no plastic on the turkey log) on top of the log then flip it over now the seam should be at the bottom of the 
Drizzle with more Baby Rays BBQ sauce place in a preheated over at 375 and cook for 60 minutes...
After 60 minute drizzle with more BBQ sauce turn over to broiler and cook for and additional 30-45minutes or until desired color
Allow to cool on rack in pan....

Mini Swiss cheese burgers

 BISQUICK IS MY NEWEST BFF
This a one of many quick, easy and fun meals made in minutes
All you'll need are:
 THE BURGER MIX                                                     BAKINGMIXTURE        
1 lb. Lean ground beef                                                   1/4 cup heavy cream
*** (can be made with ground turkey)                          1/4 low fat buttermilk                        
1 medium onion                                                             1/2 cup Bisquick
8 sml - med sized mushrooms sliced                             2 eggs
1 TBSP Worcestershire sauce                                         
1 tsp. garlic powder 
3 slices of low-fat Swiss cheese                                                GARNISH
   -cut into 12 squares                                                                 1 steakhouse tomato diced
1 cup reduce fat shredded Cheddar cheese                                  - seasoned with dried basil, cilantro
2 tsp. of the fat/salted portion of  homemade Ghee                     - olive oil, garlic powder
***or 1 tsp. salt                                                                           Catsup, Mustard, or BBQ sauce 
***You can even season this with steak seasoning
remember it's a burger go for it!!!          
                                                
HERE'S WHAT YOU DO
1) Preheat the oven 375 degrees, spray a muffin pan with cooking spray
***if using a large size muffin pan then spray only 6 molds and double up on portions
2) In a med-lg. skillet cook and brown your mushrooms using Ghee, butter or vegetable oil ( I used Ghee), then set aside
3)  In the same skillet cook your meat and onions over medium-high heat 5 to 7 minutes, until thoroughly cooked; drain, stir in Worcestershire sauce, mushrooms, garlic powder, salt, and Cheddar cheese
4) In a good size bowl, stir together baking mixture ingredients with whisk until blended. Spoon 1 TBSP baking mixture into each muffin cup. Top with about 1/4 cup burger mixture (as shown above)  

5) Then place a square of Swiss cheese on top of the meat mixture (as shown above)
 
6) Spoon 1 tablespoon baking mixture onto the Swiss cheese in each muffin cup (as shown above).
7) Bake about 30 minutes or until toothpick inserted in center comes out clean, and muffin tops are golden brown, allow to cool about 5 minutes then using a thin knife, loosen sides of muffins from pan; and place on cooling rack. Cool 10 minutes longer, and serve with garnishes
