Bacon & Cheddar cheese waffles

"IT'S IN THE MIX"!!! bacon and cheese in a waffle awesome with more bacon on top, this recipe makes 2 large waffles 

This morning I wanted something sweet & spicy to eat after my 3.88 mile run interval  (smile) and this is what happened.
This is a easy meal from basic waffle mix that requires water only, but from scratch is aways better but I wanted quick and easy 5-6 ingredient quickness.

Here's all thats needed...


~ coconut oil to grease the waffle iron
~ 3 slices of cooked bacon then crumbled
~diagonally sliced green onion for toppings
~1/4 cup shredded cheddar cheese
~1 cup pancake/waffle mix (that require only water to mix)
~1 cup water
~1 TBSP butter
~raw honey or pure maple syrup to drizzel  
•cook bacon and crumble 2 slices to add to mix save one piece for the topping, set aside 
• heat and grease waffle iron with coconut oil 

•in a medium bowl combine waffle mix, cheese, bacon, and water
• mix just to combine **do not over mix

***I added a few drops of
•butter flavor 
•coconut extract 
•vanilla extract 

***this recipe makes 2 large waffles so divide accordingly
• cook according to desired color (i like mines crispy)
•then continue with the remaining batter

•top with butter, green onions
•drizzel with raw honey or maple syrup 
•top with over easy egg

Glazed carrots & Grilled chicken salad

The star of the plate is the glossy glazed carrots. I used dark Agave to get the sticky glaze but raw honey will work also, and keep it healthy, they are yummy.

These little mini sides are quick and simple to make all you'll need is...

• 3 cups baby carrots
                        •1/3 cup water
                        • TBSP Dark Agave
                        • tsp. butter
                        • salt to taste
                        • 1 TBSP lemon juice
                        • ground pepper to taste
                         • 2 TBSP chopped fresh parsley

▪ In a skillet large enough so the carrots will lay even, combine water, carrots, Agave, butter, and salt 
▪  Bring to a simmer over medium high heat. Cover and cook for 5 mins or until tender **I don't like soggy vegetables  I like mines to have a bit of its natural crunch, but cook til your desired doneness 5-7mins, 
▪ Uncover and cook, stirring until the liquid is a syrupy glaze, 1 to 2 minutes. Stir in lemon juice and pepper. Sprinkle with parsley and serve.

Its Quiche time

This quiche is uber easy thanks Paleoleap.com for sharing. I added a few pepper flakes and four cheeses, "its whats for breakfast"

***preheat over at 375°
gather together 
~ 1\2 a bunch of fresh Basil, minced
~ 4 eggs
~ 1\2 - 1 tsp of jarred minced garlic (according to taste)
~ 1\2 cup grape tomatoes cut in half
~ 1\4 cup four cheese mix blend
~ 1\2 tsp. pepper flakes 
* sea salt & fresh cracked black pepper 
Next...
~ grease a 8' in oven safe pan with cooking spray or coconut oil  (coconut oil adds extra flavor)
~ in a medium size bowl mix together eggs, cheese, fresh basil until well combined
~ add garlic, pepper flakes, season with salt and pepper to taste.

Then...
~ arrange the tomatoes cut side up inside the bottom of the prepared pan,  add a few extra baby Basil leaves for added effects 

Now...
gentally pour the egg mixture ontop add more ***cheese according to taste optional
Bake uncovered in preheated oven for 20 mins. or until the middle is settled and cooked.

Whole wheat Cinnamon swirl Honey Banana bread

Yep!!! I had a few over ripped bananas and decided to make banana bread but, now that I'm eating more healthier and learning to appreciate making healthier choices I used whole wheat flour.
