Day 2 ... steak for breakfast

Paleo's Grilled flank steak &peppers.  I've incorporated this eatting lifestyle into mine's snd it's working out great.  The refreshing, moderation of some fats...I'm liking it!!!

Mustard Glazed chicken thighs

1/4 cup of coconut oil or 1/4cup of butter, melted * I used coconut oil
2 TBSP stone ground mustard
1/2 tsp dried sage
1/2 tsp sea salt,
black pepper to taste
8 bone-in, skin-on chicken thighs washed and cleaned remove most of fat
Directions:
*preheat oven to 425°
In a small bowl mix all ingredients
Place chicken in 9x13 pan or bigger skin side up
Brush mustard mixture over chicken or dip the chicken in mixture
***make sure mixture get underneath the if you plan on removing the skin before eating.
Bake for 45 minutes or the chicken's internal temperature is 165°

Swirly Carrot zucchini breakfast quiche & baked bacon

Swirly Crustless Quiche
1 large zucchini - grated with skin the strain zucchini through a cheese cloth or strainer bag
2 large carrots - shred or grate
12 large eggs
A 9 x 13 pan greased with bacon fat
**preheat oven 375°
Directions
Mix all ingredients in a bowl very well, pour mixture into greased pan, bake for 30-45 minutes or until the edges are brown.
***Quiche will puff up while cooking but willdeflat when removed from the oven

Veggie lasagna for 4 with spicey garlic bread

Today starts the week of my low GI/GL eating plan. I'm not goin to feel bad about the spicey garlic bread because it taste sooooo good and the pasta is whole grain.

Berry blast protein shake, spinach cucumber grape blend,  pear romain lettuce blend, & V-8 with Tabasco

Peppered salmon with blueberry sauce and collard greens

This is low carb week for me so I defrosted the collards from New Year's day,  grilled the salmon and topped it with cooked blueberries.

My morning git up and go

Green tea -1 1/2 cup hot water, 1tsp of maple syrup & 3slices of ginger.
Strawberry cheesecake protein shake - blend together 6 frozen strawberries, 1/2 cup Greek yogurt, 1/2 cup trop50 OJ, 1scoop vanilla whey, 1/2 tsp nutmeg *or to tast, 1tsp cinnamon *or to taste and blend.
Carrot bell pepper juice blend.
Cranberry pomegranate blend.

Recipe for Crustless New York Cheesecake

I wasn't too sure how to repost or add a recipe after a post so this is what I did. I hope it helps

Morning booster shot

Blueberry smoothie
1/2 cup frozen blueberries
1/2 medium frozen banana
1/2 cup nonfat plain Greek yogurt
1/2cup Trop50 orange juice
***I added 1 scoop vanilla Whey protein powder
1/2 cup water
2 tsp fiber
Blend well and enjoy!!!

Zucchini boats

I eye balled the ingredients starting with
1lb of Jenny O taco seasoned gound turkey
4-5 zucchini cut lengthwise
1cup Ragu sauce adjust taste
1/2 green bell pepper diced
1/2 cup Panko bread crumbs
1/4 cup cheddar cheese
1/4 cup mozzarella cheese
1/4 tsp basil
1/4 tsp oregano
Parmesan cheese to top
*preheat oven @375

Line cookie sheet with parchment paper

*use a melon baller and remove the inside of zucchini leaving 1/2 thickness and sprinkle with salt and pepper
*Brown and crumble meat til done and drained, and Ragu and spices cook for 5minutes stir until combined and to taste remove from heat, stir in Panko crumbs and cheese, fill the zucchini boats with meat mixture and top with more cheese as desired,  bake for 15-20 minutes remove from oven and top with parmesan cheese.

Cheese tuna muffins

I needed quick and easy to take to work for lunch and made these. They approximately 109 in calories,  8g fat, 12g protein, 1g carbs ***depending on how cheesy you want them
Basic recipe to make 12 muffins:
3 six oz cans of tuna or salmon well drained
1 stalk celery finely chopped
1/2 med bell pepper finely chopped
3 TBSP finely chopped onion
1/4 Old Bay seasoning
1/4 tsp salt
1/4 tsp pepper
6oz cheddar cheese shredded
Mix all ingredients together and spoon into a well greased muffin pan @350 for 30 mins until puffed, set, and edges are lightly browned.

My attempt at perfection

Thanks to Yummly.com for sharing their recipe for grilled Cranberry  & Brie cheese sandwich. Even though mine's doesn't appear to stack up like their's but the taste is awesome I would've never thought to combine the two.

Leftovers...

My leftovers from the traditional New Years day feast made a great lunch today.  This was my first time ever cooking collard greens and blackeye peas and they turned out delicious thanks to my friend Gregory Jackson. His recipe made enough for my family to take some home and for me to freeze and today I ate the last of it.

My #1 must have in the kitchen

I used to buy flavored olive oil and they can be very pricey so I decided to create my own and now my family uses it as much as I do. I purchased 4 bottles from the thrift store @ $1.50 each (steam cleaned them) and the garlic,  red hot peppers,  and peppercorns at Island Pacific supermarket. I gave a couple as gifts for Christmas last year.

Earl Grey shortbread cookies

I was up early today drinking my green tea wondering what to bake and came across Claire Robinson's Earl Grey shortbread cookies on www.foodnetwork.com. I read the reviews that were mostly 5★'s and began baking. I used black tea as many reviews changed their teas and I added 1tsp of almond extract and 1tsp of butter flavor to boot. The cookies are more than I expected I agree they are ★★★★★!!!
