Protein...protein & veggies

Morning yawl...
I love quick meals that's spicey and taste good. This morning I put together some of my favorites: shrimps, asparagus,  mushrooms,  sweet peppers, jalapeno peppers, butter, coconut oil, garlic, fresh ginger,  served over soft folded 2 whole eggs and 1egg white blended with cheddar cheese served with 9 grain toast topped with agave and peppers flakes and to wash it all down a cranberry & grapefruit cocktail.

Quik stirfry shrimp & veggies in oyster sauce

In this dish I used 24 medium shrimps (seasoned in sea salt, pepper flakes, olive oil, basil, garlic powder overnight) 8 mini sweet peppers sliced, 24 thin asparagus cut diagonally,  6 medium mushrooms sliced, 4 green onions sliced,  6 garlic cloves smashed,  thumb size fresh ginger shredded,  1TBSPcoconut oil, 1 &1/2 TBSP butter, olive oil, sesame oil, oyster sauce, water..
1) quickly sautee asparagus in 1/2 TBSP butter til colored add enough water to steam them until crisp but tender set aside
2) in same skillet melt 1TBSP of butter then add mushrooms sautee quickly til colored set aside
3) add enough olive oil to quickly roast peppers set aside
4) adjust heat to med - hi melt coconut oil then add shrimp cook til colored, turn them over add the garlic, ginger, green onions let cook approx 2min then stir, stir the veggies into the skilllet and cook, push all the mixture to one side of the skillet and add 3-4 drops of sesame seed oil then stir the mixture to coat again push mixture to one side and add oyster sauce (adjust to your taste) remove from heat and ENJOY!!!

Roasted Chipotle chicken salad for two

I love making salads they can be so versatile plus this way you can ensure you're eating your vegetables.
This salad actually has two layers of mixed greens, spinach, red onions, orange & red bell peppers, 2 slices of bacon, 4oz grilled chicken tenderloin, 1/2 roma tomato all topped with Roasted Chipotle pomegranate & pineapple dipping sauce mixed with EVOO.

Gingerbread cake made from SPLENDA

My doctor informed me that my blood sugar numbers were rising since I've started baking, seeing that I'm not ready to stop baking or enjoying what I bake I figured I'd change the way I bake. I found this Gingerbread cake on www.diabetes.org and it is delicious. But, their cake (pictured without drizzle)  suggests just dusting the cool finshed cake with powder sugar and I've included their nutritional value for that cake (servings of 18 slices).
Well...me being me added a cream cheese drizzle and actual crystal ginger candy to the batter just because (I didnt do the values for this).
I can honestly say this cake can stand alone it is flavorful and moist...it is truely delicious just with a light dusting of confections sugar.
