While you were sleeping...

BACON, EGGS & SPAHETTI....really?

I was so amp to cook this for breakfast this morning I couldn't sleep. My boyfriend says, "Babe, where your going why you up so early"? I jumped out of bed and said, "I cant sleep I got food on my mind", so while he was sleeping I made this.

I love bacon Apple wood bacon to be precise. In this piece of eye candy I used:
1 1/2 slices of sour dough bread, broken into pieces
1/3 cup of fresh grated Parmesan cheese
2 1/2 TBSP EVOO
6 oz. whole wheat spaghetti ***regular spaghetti will work
5 slices of Apple wood bacon ***or regular bacon
2 cloves of garlic ***I smashed then chopped mines
1/2 tsp. salt and cracked black pepper
2 eggs
1/4 tsp. crushed red pepper flake
1 TBSP heavy cream*** this is used at add a texture to the spaghetti but not all will be used depending on your taste
snipped parsley, cilantro, basil, and extra Parmesan cheese

1) Preheat oven 350F. In a food processor add bread 1TBSP of Parmesan cheese, and 1 1/2 tsp. of EVOO. Pulse ingredients until coarse chopped, spread on cookie sheet and toss in some chopped basil and parsley then bake until golden brown about 10 minutes.
2) in a medium to large pot cook spaghetti according to direction, drain and set aside
***Retain 3/4 cups of the spaghetti water
***you might not need to use all of it
3) Now, in a medium to large skillet cook the bacon until crispy, drain on paper towel tear into big pieces, keep skillet warm and retain 2 TBSP for frying the eggs.
 
4) In the same pasta pot add the remaining 2 TBSP of EVOO and the cook the garlic over medium heat ***careful not to burn it or it will a bitter taste. Remove the darkened pieces of garlic if needed, add salt and red peppers, cooked pasta and remaining parmesan cheese. Add enough of the reserved pasta water to desired consistency toss to coat, then slowly add heavy cream until desired texture, sprinkle more herbs (basil and cilantro), set aside
5) In the large skillet fry your eggs in the reserved bacon drippings sunny side up
6) divide the pasta onto warm plate sprinkle with bacon, toasted bread, and more cheese and egg
